DIY Flumps!

Water 75ml
Gelatine / Vege-Gel 4 leaves
Ground ginger ½ tsp
Ground cinnamon ½ tsp
Caster sugar ½ tsp
Golden syrup 120g
Black treacle 1tbs
1 small jug cold water

For Dusting:

Corn flour 50g
Icing sugar 50g
Ground ginger 1 tsp


1. Soak the gelatine / Vege-Gel in the jug of cold water

2. Boil the caster sugar, treacle, golden syrup and 75ml water to 112 degrees

3. Add gelatine / Vege-Gel and spices

4. Add mixture to a food mixer, whisk until warm, light and fluffy (meringue texture)

5. Line a tray with cling film

6. Sieve a layer of dusting onto lined tray and pour in the mix

7. Sieve dusting on top, cling wrap the tray and leave in a cool dry place to set
