Chef of the Future 2013 - Showroom finalist!

Showroom Sous Chef, Jon Tite, has been announced as one of the finalists in the Vegetarian Society’s Chef of the Future 2013 competition!

This is the third year the Vegetarian Society’s cookery school, Cordon Vert, has run the competition. The final, on Wednesday 8 May, will see four contestants battle it out to produce a three course meal, plated for four people, within three hours.

The judging panel this year is Alex Connell, Cordon Vert Principal Tutor, Jane Hughes, Cordon Vert Tutor, food writer and editor of the Vegetarian magazine, Mike Haddow, Group Executive Chef - Shire Hotels and Thwaites Inns of Character, Robert Higginson, Sous Chef Dettoris Restaurant - Cresta Court Hotel, Altrincham.

Alex Connell, Cordon Vert Principal Tutor, said:

“We set out to find fresh, innovative dishes that celebrate quality food which is able to hold its own for all audiences – vegetarian and meat eater alike. The finalist’s menus certainly do this.”

Jon Tite, Showroom Sous Chef, said:

“Getting to the final was an amazing surprise. The gourmet nights at the Showroom have given me a chance to try out new ideas and the confidence to enter the competition. If it all falls into place then I think I’m in with a very good chance. Fingers crossed!”

Jon’s menu for the Chef of the Future final:

• Warmed watercress and nettle panna cotta with early summer salad

• Polenta and asparagus ballotine with Barncliffe brie, seared asparagus tips, fondant potato, pickled wild mushrooms and shallot jus

• Rhubarb and custard baked Alaska, ginger tuille and rhubarb and stem ginger syrup

Over the last few months, the Showroom has hosted a number of speciality gourmet vegetarian and vegan evenings, which Jon has devised the menus for. The events have proved to be phenomenally successful, often selling out, proving there is a real appetite for high quality, imaginative vegetarian cuisine.
